Collage has an intriguing design concept, which hardly surprising given its location in the architecturally innovative, city-centre, SAS Radisson hotel. The walls are lined with created twenty-six paintings, each representing a letter from A to Z paintings by British pop art maestro, Sir Peter Blake. Overall, the restaurant is contemporary and chic, but mellow, fine dining without formality. For those keen to begin in a relaxed mood, optional valet parking solves the city centre congestion issue. The menu is stylish and traditional, but with a few twists – the fantastic ‘one plate’ dishes are great for sharing, being spread with a generous selection of Italian, Greek, Spanish or Scottish delights. Quality British and Scottish dishes include home favourites: chicken, fish, duck, mussels and pate. The most popular dish is sirloin steak, cooked with precision.
